LAKE CHARLES, La. – Brunch in the Lake City is being redefined at Luna Bar and Grill. Chef Dave Evans has begun serving six different Sunday mid-morning dining items and they all share New Orleans-esque theme, but executed with southwest Louisiana culinary sensibilities.
“I wanted to cook something that people in Lake Charles will be familiar with. But I also wanted to prepare dishes that visitors to the area will go back home and talk about,” Evans said.
Evans creations feature Louisiana harvested seafood like shrimp and oysters. He also utilizes boudin – a rustic Louisiana sausage – and crawfish featured ingredients in his special dishes too.
An in-house Remoulade sauce, devised from Evans’ own mind, adds a zesty touch to the menu that he tweaks to keep his fans palates from becoming complacent.
“Louisiana is about flavor. I’m about creativity and great tasting food. You can’t go wrong with any of our dishes which just by their names scream out Zydeco, Cajun French music, the bayous and all the great food that can be found in our state,” Evans said.
